Boxer rolls into the food truck ring with Ringside Grill Food Truck

Not everyone who comes into the food truck business started in food. Some in fact tested their mettle in an entirely different arena of life. That's certainly the case for Ringside Grill Food Truck, which is owned by wife and husband pair Maria and Tarvis Simms.

Boxing fans might recognize the name Tarvis Simms, as he is a professional boxer in the Middleweight category, with an impressive list of wins under his belt. In 2011, the pair took the jump into food truck in Norwalk, Connecticut and they have kept it up ever since. Read all about it below in today's edition of the Food Truck Spotlight.

How did you come up with the name?

My husband is a World Rated Boxer.

What prompted you to start a food truck?

Maria always had the talent and work ethic to open a food truck.

What's on your food truck menu? Why did you choose this cuisine?

Italian and American food.

Do you make all the food on the truck or do you use home-based kitchen or commissary space?

We make our food on the food truck.

What's the best part of being a food truck operator?

You get to meet the people whom you serve.

What's the worst part of operating a food truck?

Long hours.

What lessons have you learned since launching the truck?

Learning how to treat people good but don't let them take advantage of you.

Is there anything you would have done differently at the start?

No, we have always give to the less fortunate and we never turn them away.

Any tips/advice to others thinking of launching a food truck?

Just be true to yourself and always treat them kindly.

Do you have any anecdotes about running a food truck — any unique interactions or special events you've been booked at?

Always fresh, always fast, always delicious.
